Heckfield Place is a beautifully restored hotel on a 400-acre farm in the county of Hampshire, just outside of London. The kitchen sources some of its produce from our biodynamic market garden on site, and chefs take regular tours of the farm to draw inspiration from what they see growing.
We are currently looking for a Head Chef to lead our dynamic Hearth kitchen. Most of our dishes are created to showcase the produce from the farm and is cooked on an open fire. We are looking for a Head Chef that is willing to develop and train the junior staff and has an enthusiastic approach to a unique style of cooking.
About us:
Heckfield Home Farm was originally established as part of the Estate in the mid-19th century, and was an exemplar of the self-sustaining relationship between land and house. When Heckfield Place was restored, this relationship was rebuild and today our ‘estate to plate’ ethos sees the Estate supplying fruit, vegetables, flowers, meat and dairy to the hotel’s restaurants, bars and wellbeing space, along with year-round flower decorations for the hotel and its rooms.
Our 340-acre organic working Farm is a mixture of arable and livestock where sheep, Aberdeen angus and British saddleback pigs are raised for the kitchens, several flocks of laying hens supply all eggs to the house. We have a herd of Guernsey cows and a purpose-built processing unit to produce our own dairy on site, our biodynamic Market Garden works together with the chefs in supplying both the hotel’s restaurants with beautiful and truly seasonal produce. We also do Foraging across the Estate.
Our chefs and growers work closely together, with the chefs doing harvesting shifts from time to time, allowing them to understand and draw inspiration from the growing and produce.
Position responsibilities include but aren't limited to:
- The ability to work efficiently and carefully to maintain the high quality and consistency required in our kitchen and to handle quality ingredients with care and attention.
- Very important the person must be farm to table focused - elevating the home grown produce with minimal manipulation and serving exquisite paired back food.
- Understanding how to cook on open fire.
- Be able to adapt and create a changing menu and be open to feedback.
- Have an open schedule that allows you to work evenings and weekends.
- Manage the day to day running of the Hearth kitchen, from Dinner service, any scheduled events and all external food services linked to Heckfield Place.
- Working with the Executive Chef and Culinary Director to ensure the culinary vision, ethos, sustainability, and excellence is maintained.
- Strong acumen in effective communication towards the junior and senior team members at Heckfield Place.
- Have a clear vision for the daily, long-term, and future projects for the Hearth kitchen and restaurant.
- Manage efficiently and effectively – we run a professional and organised kitchens where mentorship and education is paramount.
- Attention to detail is vital to ensure the standards are maintained and met.
